Melt-in-your-mouth Yumminess!

I think this might actually be my first blog that is not about my children! WOW!

My sister called me this morning and told me about this delicious candy that a lady at her church in Memphis had let her try. She said it just melted in her mouth, and it was made from......drum roll please........POTATOES!!!!!! It is called potato candy. You may have heard of it, but I never have. So out of curiousity I just had to try it. My sister tried to make it too, but she unfortunately is not as good at cooking as I am (just kidding Karrie!). I am glad she tried to make it first because she discovered what did not work and called me to give me some hints. Anyways, it was so easy to make! You boil a SMALL potato (Karrie used a large one). After it is boiled, you mash it. Then you add about a pound of powdered sugar to it. It should be hard enough to roll into a ball (if not, then keep adding powdered sugar). I divided my ball of dough into three different balls so that it would not be so large. Then roll out the ball of dough and spread peanut butter on top. The last step is to roll it up like a jelly roll or burrito and stick it into the fridge. Cut it into small slices after it hardens. It is so yummy!
